Baked Carrot Chips – More Than A Healthy Snack!

Carrots are often considered to be the ultimate food for health. Carrots are rich in fiber, minerals and vitamins. And evidence suggests eating more fruits and vegetables that are rich in antioxidants, such as carrots, can help reduce cardiovascular disease risks.

They are also a friendly food for weight loss and have been associated with lower cholesterol levels and improved eye health. Which is why the addictive snack you didn’t know you needed is these healthy bakes carrot chips. They’re easy to make and they only have a handful of ingredients.


  • 2 pounds of carrots
  • 1/4 cup of olive or coconut oil
  • 1 tablespoon of sea salt
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground cinnamon


Preheat the oven to 425 degrees F. Line several large parchment paper baking sheets and set aside.

Trim the tops of the carrots. Starting on the thick end, slice the carrots in order to create elongated slices. It’s best you use a mandolin slicer. When you reach the thin end, stop. You can save them to use in soup or salad.

In a large bowl, place the carrot slices and add the oil, salt, cumin, and cinnamon. Then put the slices on the baking sheets in a single layer.

Bake till the edges begin to curl up and turn crisp, this should take 12 – 15 minutes. Then flip all the chips over and bake the bottoms for another 5 – 8 minutes.

Carrot Health Benefits

Carrots are cheap, available year-round and versatile in the kitchen. But carrots also have advantages in improving your overall health. Carrots can be eaten whole and raw, shredded in a salad, boiled or steamed, you can even make a carrot cake.

Vitamin A helps protect the surface of the eye and is needed to form a protein found in the eye called rhodopsin, both contributing to good vision. Rhodsopsin activates as darkness falls and light dims and allows the eyes to adjust to the changes.

After absorbing water from the GI tract, soluble fiber, the other form of fiber, can be considered as a gel. Soluble fiber can slow absorption of sugar and increase levels of blood sugar. While soluble fiber plays a role in sugar control, the development of type 2 diabetes may be reduced by insoluble fiber.

Carrots contain vitamin K, which is recognized regularly in blood clotting for its key role. Blood clotting can be essential to minimize blood loss after injury and can even save lives.
